Moderato à cent d'huîtres was composed during the summer of 2014 for Sylvain Durantel. It was released in 2016 on a CD called "La Cuisine à l'alto", the gastronomical-literary-musical theme being an original idea by Sylvain Durantel. It included new pieces by sixteen composers for viola, piano and reciter.

"moderato à cent d'huîtres", the title of the piece, is a word play in French on huit (eight) and huître (oyster), so it's the tempo of the piece ( = 108) as well as being a hundred oysters. The author Honoré de Balzac was reputed to have gone to a restaurant after finishing a work to indulge in a hundred oysters. There's also a triple pun with cent and sang (blood) which are pronounced the same. From Balzac's novel La Duchesse de Langeais (la Comédie Humaine) (text recited by François Castang);

Le comte de Montriveau était un homme qui avait une incroyable passion pour les huîtres.
- Combien en mangeait-il donc ? dit le duc de Grandlieu.
- Tous les jours dix douzaines.
- Sans être incommodé ?
- Pas le moins du monde.
Oh ! mais c'est extraordinaire ! Ce goût ne lui a donné ni la pierre, ni la goutte, ni aucune incommodité ?
- Non, il s'est parfaitement porté, il est mort par accident.
- Par accident ! La nature lui avait dit de manger des huîtres, elles lui étaient probablement nécessaires; car, jusqu'à un certain point, nos goûts prédominants sont des conditions de notre existence.
